Bucket List #78. Exploring more in the Kitchen

I must start off with saying that my family spoiled their kids until marriage or even beyond that. My mother always cooked for the household and we would always enjoy the foods we loved because she always made somebody else’s favorite and to think now, it’s a wonder she never really wanted to eat. She was always making everybody else’s favorite dishes instead of her own. My mom is half Indian and always enjoyed Indian cuisine, the spicy, more flavorful foods that we were not used to.

My cousin may be vegetarian but she makes some REALLY delicious foods and when we visit her, my mom eats more than usual which really got me thinking. My sister and I decided, a while ago, that it’s time we switch the responsibilities and try to make the foods my mom enjoys.

We took over the cooking responsibilities completely but it didn’t mean the skill to cook the dishes she was craving would work out perfectly! We turn to professional recipes, or to friends and family and with their knowledge, we’re able to make anything she craves for.

Here are some delicious recipes for you to try too

MUTTON CURRY

EASY TANDOORI CHICKEN

  • 1 Chicken
  • 1 TBSP Ginger and Garlic masala
  • 1 TBSP Tandoori masala
  • 2 TBSP Lemon Juice
  • 2TBSP Mayonnaise
  • 1/2 Cup Sour Milk

Blend all the ingredients and marinate the chicken and boil in a pot until the chicken is cooked thoroughly.

VEGETARIAN DISH – DHAL

  • 1 Cup Dhal
  • 1 Grated Carrot
  • 1 Grated Potato
  • 1 Grated Butternut
  • 1 Grated Eggplant
  • 1/2 TBSP Turmeric

Soak and boil all ingredients together. Once the vegetable are almost done cooking (soft), Add the following:

  • 1 Grated tomato
  • 1/2 of one Lemon juice
  • 1 TSP Green chili masala
  • 1 TSP Ground Ginger
  • Dhana + Jeru
  • 1 TBSP Sugar
  • 1 TSP Peanuts
  • 1 TSP Turmeric

Once these ingrediants are almost done cooking, finally add:

  • 1 TSP of ground Coconut
  • 1 TSP Oil
  • 1/2 TSP Rye Mheti
  • Pinch of Salt

Once the experiments go well and the compliments on the aroma and taste of these dishes start spilling in, you wouldn’t want to stop creating new dishes everyday. My usual cuisine is a lot more English, Asian or Italian, so exploring the Oriental Cuisine is really fun.
